Sheet Pan Chicken Fajitas (Oven Baked)

Ingredients
1 1/2 lbs chicken breast tenders
2 large bell peppers (any color)
1 yellow or red onion
1 tbsp olive oil
1 packet fajita seasoning mix
1 lime
tortillas
optional fajita toppings (shredded cheese, avocado, cilantro, sour cream, etc.)

Instructions
1. Preheat oven to 425 degrees and grease a large baking sheet.
  1. Cut the bell peppers and the onion into long1/4 inch slices and place them into large bowl. Toss them with the chicken, olive oil and packet of fajita seasoning mix until well combined. 
  2. Spread the mixture out onto your prepared baking sheet and bake for 15-20 minutes or until the chicken is cooked through, and then turn the broiler on for about 2 minutes allowing the veggies to brown a little.
  3. Warm tortillas 
  4. Squeeze the lime juice all over the hot fajita mixture, and serve in your warm tortillas with any additional toppings that you'd like.

hearty Lentil Lemon Soup

LENTIL LEMON SOUPMakes 6 servings
INGREDIENTS:
  • 1/2 yellow onion, diced
  • 1 Tbsp. olive oil
  • 5 cups vegetable broth
  • 1 large carrot, cubed
  • 4 cups kale, chopped
  • ½ pound green lentils (dry) 
  • 2 tsp. lemon juice 
  • 1/2 tsp. turmeric
  • 1/2 tsp. cumin powder
  • 2 garlic cloves 
Directions:
​
  1. Add the onions and garlic to a pot with olive oil and cook for 3 - 5 minutes.
  2. Add carrots and kale and cook for 3 minutes.
  3. Add lentils and vegetable broth and bring to a boil.
  4. Add seasonings
  5. Reduce to a simmer and cook for 50 minutes to 1 hour. Stir often.
  6. Salt and pepper to taste and lemon juice stir and enjoy!

Mulled Apple Cider

Crockpot Mulled Apple Cider Recipe
8 cups of apple cider
4 or 5 cinnamon sticks for making the cider
1 medium sized orange
1-2 whole cloves
Extra cinnamon sticks for serving


Pour apple cider into a crock pot. Add 4 or 5 cinnamon sticks and 1-2 cloves. Slice orange. Place the orange slices into the crock pot. Heat on low for about 4 or 5 hours. Remove oranges, cloves, and cinnamon sticks before serving.

PUMPKIN PIE SMOOTHIE BOWL
  2 frozen ripe bananas,
  1/2 cup pumpkin puree, not pie filling
  2 medjool dates, pitted
  2 tbsp almond butter

 1/2 tsp vanilla extract
 1/2 tsp cinnamon
 1/8 tsp nutmeg
 1/8 tsp allspice
 1/4 cup plant-based milk

TOPPINGS (OPTIONAL)
Granola, pumpkin seeds, crushed pecans, sliced banana, almond butter

Instructions:

  1. 1  Add all ingredients to a blender.
  2. 2  Blend ingredients until smooth and creamy and add your toppings.

Best Pumpkin Bread Recipe

Ingredients:
  • 1 15 oz can pumpkin puree 
  • ½ cup butter melted
  • ¾ cup brown sugar
  • ¾ cup granulated sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 ¾ cups all purpose flour
  • 1 TBS pumpkin pie spice
  • 2 tsp cinnamin 
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp baking soda
Instructions:
  • Preheat oven to 350 degrees F.
  • Grease a 9x5” loaf pan, set aside.
  • In a small bowl, mix together flour, pumpkin pie spice, cinnamon, baking powder, salt and baking soda. Set aside.
  • In a large bowl whisk together pumpkin puree and melted butter.
  • Add brown sugar and granulated sugar and stir until combined and there are no lumps.
  • Add eggs and vanilla and stir to combine.
  • Add dry ingredients and stir until batter is smooth.
  • Pour batter in to prepared loaf pan and use a spatula to smooth out the top.
  • Bake in preheated oven for 60 minutes, or until toothpick  inserted into the center of the loaf comes out clean.
  • Let pumpkin bread cool in the loaf pan on a wire rack for at least 1 hour.

Banana BrEad

Ingredients:
3 bananas, mashed
1/2 cup plain fat free Greek yogurt
1/2 cup unsweetened applesauce
1/2 cup honey
1 teaspoon vanilla
2 eggs
1 3/4 cup whole wheat flour (or all-purpose or gluten-free)
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/3 cup chopped walnuts (optional)


Instructions:
Preheat oven to 325 degrees and grease a 9×5 inch loaf pan.
In a large mixing bowl combine mashed banana, Greek yogurt, applesauce, and honey.
Stir in vanilla, cinnamon, and eggs.
Next add the flour, salt, walnuts, baking soda, and mix 
Pour the banana bread batter into the greased loaf pan and bake for 45-55 minutes, or until the top is lightly browned and a toothpick comes out clean.
